1. Preheat Oven:

Preheat your oven to 375°F (190°C).

Grease a mini muffin pan or line with mini paper liners.
2. Make the Batter:

In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.

In a separate bowl, mix milk, oil, egg, and vanilla.

Add the wet ingredients to the dry ingredients and mix just until combined — do not overmix.
3. Bake:

Spoon batter into the mini muffin tin, filling each about ¾ full.
